Dotty's Cranberry Bread

No egg and no milk

1 1/2 c flour
1 c Splenda or sugar
1 t baking soda 1 t salt
grated rind of 1 lemon
1 t lemon extract
1 T vinegar
5 T melted butter
1 c cold water
1 1/2 c fresh cranberries
1/2 c chopped walnuts


Grease a loaf pan (I use butter flavored Pam). Mix dry ingredients well. You may sift them (except lemon rind) together, but there is no need to do this. Add liquid ingredients and mix well. Bake 50 min at 350oF. 8 servings.

This recipe was based on Whacky Chocolate Cake. Most cranberry bread recipes use orange juice and orange rind, but I didn't have any oranges on hand, so I tried lemon. I like the result.

Substitution suggestions:

  • Use orange juice instead of the water, substitute orange rind for the lemon rind and skip the extract.
  • Substitute sunflower seeds or other nuts for the walnuts.
  • Use whole wheat flour for part of the flour or Cornell Flour Formula for all of the flour - skip the mild powder if someone in your family is allergic to milk.
