2 lbs hamburger (80% or 90% lean)
1 large onion
4 small potatoes, diced
1/2 package dried onion soup mix
1/2 t cumin
1/2 t five spice
Mix all angredients with a fork, breaking up the hamburger into small pieces. Bake in a loaf pan in 350oF oven for 1 1/4 hrs. The loaf is ready when the potatoes are soft.
Substitution suggestions:
Add green pepper, celery, carrots or other chopped vegetables.
Replace the cumin and five spice with sage, thyme or other herbs and spices.
Add apple and a few raisins.
For a moister loaf, use canned soup concentrate or add milk, yogurt, sour cream or V-8 juice.
Add pumpkin or squash.
Substitute cooked red beans, pinto beans, butter beans or black eyed peas for the potato. Mash them some before adding to the mixture.
Substitute cooked brown or white rice for the potato.
