6 medium apples, pared and sliced
1 c flour
1/2 c sugar
1 t baking powder
3/4 t salt
1 small egg
1/4 c melted butter
1/2 t cinnamon
Grease a 6"x10" baking dish. Place apples in dish. Mix flour, sugar, baking powder, salt and egg until crumbly. Pour mixture over apples. Pour butter over all. Sprinkle with cinnamon. Bake 30 to 40 min at 350oF. 8 servings.
Substitution suggestions: I couldn't resist tweaking even this recipe. It originally called for shortening (Mom used Crisco), but I changed it to butter. Try adding raisins or substituting other fruits. Vary the spice. Substitute oatmeal or wheat germ for some of the flour.
